Fall’s Newest Obsession: Pimento Cheese Cornbread Muffins

Ingredients:
1 box (8.5 oz) corn muffin mix
½ cup pimento cheese (DIY or go for Queen Charlotte—our fave)
1 egg
¼ cup milk
Instructions:
Crank up the oven to 400°F.
Mix the corn muffin mix, egg, and milk until you’ve got a thick, dreamy batter.
Line your muffin tin with parchment papers (we’re obsessed with PaperChef’s—seriously, they’re magic). Fill each cup with 2 heaping spoonfuls of batter.
Bake for about 15 minutes, or until a toothpick comes out clean and your kitchen smells amazing.
